By request of the attendees at the BC Day BBQ at the Gazebo, here is the recipe for Liz' Chocolate Cherry Cake...
1-1/2 cups all-purpose flour
1 cup granulated sugar
1/4 cup cocoa
1 tsp each: baking powder, baking soda
1/2 tsp salt
1/3 cup vegetable oil
1 tbsp apple cider vinegar
1 tsp vanilla
1 cup warm water
1 cup pitted, quartered fresh Okanagan cherries
1/2 cup chocolate chips
In mixing bowl, combine dry ingredients (except cherries and chocolate chips); mix thoroughly. Add liquid ingredients; stir with whisk until blended. Stir in cherries and chocolate chips. Pour into lightly greased 10" round cake pan. Bake in 350F oven for 30 minutes or until toothpick comes out clean when inserted near the center.
